The walnuts are picked when they are still soft and green, this happens according to tradition on the 24th June, the night of San Giovanni (Saint John the Baptist) when the walnuts have not yet formed their shells. They are from here then macerated for 9 months. Intense aromas of walnuts, warm, spicy notes of cinnamon and cloves with a hint of balsamic and vegetal aromas of the walnut tree bark.
